Encanta Echo                   September 2020
Welcome to our September edition of the Encanta Echo. I know it has only been a short time since our last Echo edition, however the start of September marks some important dates we wanted to showcase to our readers and to once again wear our hearts on our sleeves.

As a child growing up, I always disliked Father’s Day being the first Sunday in September, mainly because I had only celebrated my birthday a few days before and any monetary gifts I received went straight back out again to buy Dad a present! Unfortunately, he passed away when I was 17 and looking back I would give anything to have had him stick around a little longer and be around for so many important milestones in my life.

My kids Grace and Max are fortunate to have the best Dad in the world. So for Jason’s Father’s Day this year we rented a campervan (a little one not those swish looking ones with the shower and toilet!) and headed south to the quaint town of Pemberton in WA’s South West. It bucketed with rain the whole weekend so toasting marshmallows on a campfire became toasting them over a candle but still what an experience and more importantly creating memories for our family to last a lifetime. This year has really shown me that family is everything so whilst we still battle through this downturn, we savour these times and more simple things in life.

The coming months, will see Encanta looking to kick start some of our events in hibernation as well as deliver in person and virtual events – be sure to stay in touch and connect if we can assist  with your next event – be it large or small.

Meet the Fathers
Courtesy of Father's Day, three of our Encanta Team members would like to introduce their Dad's to our Encanta Community. 

Before doing so though, we hope all the Dads and Father figures had a great day. We know that Fathers come in all shapes and sizes, so we extend our wishes to all the dads - the step-dads and boyfriends playing important roles in kids' lives, the grandpas, the uncles, the mums who also step into the dad's shoes with no father figure available, the bosses taking on father-figure roles to young apprentices and the mates, whether that's to pick up the kids from sport, or being available for a heart-to-heart chat. 
Nicolle & John
Dad was always the life of the party and loved to socialise and do business over lunch and a wine, that must be where I get my love of a chat, red wine and a good networking event! Another passion we shared was sailing and we spent many summers on the yacht over at Rottnest in Thomsons Bay and twilight sailing on the Swan River. He was a hard worker with an entrepreneurial spirit, having had his own businesses most of his working life. Dad was a very loving, hands on father and he instilled into both my brother and myself to always try our best, be kind, to follow our dreams and to never give up.
Lexie & Alan
I’ve always had great admiration for my Dad, of how hardworking and dedicated he is, and for everything that he has achieved. His work ethic has inspired me in my career, and he has always taken so much interest in what I do at Encanta, providing endless support over the years. Dad would do anything to help his kids, even though we all live in different cities around the world. I miss his regular trips to Melbourne and look forward to the borders re-opening so we can see each other again!
Faith & Alan 
I am very lucky to call the most kind hearted and selfless man I know, my dad. Some of our best chats have been held in the car - driving me to sport in the early hours of the morning, picking me up from parties late at night & driving from Melbourne to Queensland, just the two of us. As the years go on, the lifts are being made redundant and are instead replaced with time at the footy. We can't wait for the season to begin again next year! 
Hello to our Clients
The Encanta team is very fortunate to work alongside so many wonderful clients. This month, we would like to feature an old friend, Nigel Laing. Renee and Nigel started working together in 2011 on the 2012 World Muscle Society Annual Congress. Eight years on and the two of them continue to catch up regularly. There is so much more to just running a conference, the reward not only sits in the finished product, but the people you meet and friendships you make along the way.

September 10, 2020 is R U OK? Day.
This year has been tough on everyone and in particular for those in our industry. We encourage you to keep reaching out to friends, family and colleagues and remember to go further than R U OK? 
Coming Up  
Perth is getting back to business, with the Encanta team partnering with StudyPerth to deliver their StudyPerth Education and Careers Expo to be held at the Perth Convention and Exhibition Centre, Friday 9 and Saturday 10 October. We are super excited to be using our skills and creativity to deliver this event and showcase the great work that StudyPerth does to encourage international students to study in Perth as well as the support they provide to these students when they are so far away from home.
With face-to-face events on hold, virtual and hybrid events are on the horizon for the Encanta team! Initially the Australasian College for Emergency Medicine (ACEM) Annual Scientific Meeting was set to take place at the National Convention Centre, Canberra; now plans are well underway for a Virtual ASM instead. The program is looking impressive with 4 days of scientific presentations, workshops and lots of networking opportunities including a virtual wine tasting!

Nakita Rogers
Nakita made the move to Australia from her home in New Zealand more than 10 years ago. After spending a couple of years working in the Events industry in the Whitsundays she decided on a move across the country to gain further experience in the industry. With a background in event coordination and styling she has strong attention to detail and loves seeing all aspects of an event come together.
Recipe of the month
Straight from the top of her head - have a read of Jade's Eggplant Parmigiana, I know a few of the Encanta Team can't wait to try this one! 
  • 1x large eggplant
  • Olive oil
  • 1x onion diced
  • 2x crushed garlic cloves
  • Large jar of passata sauce
  • 400g tin of crushed tomatoes
  • Salt and pepper
  • Italian seasoning
  • Breadcrumbs
  • 2x eggs
  • Flour
  • Parmesan cheese
  • Dried oregano
  1. Slice eggplant 1cm thick and line the eggplant inside a colander. Generously salt the eggplant and leave for 30 minutes. Use a paper towel to wipe and absorb the excess water off each slice of eggplant.
  2. In the meantime, heat olive oil in a saucepan over medium-high heat. Fry onion and garlic for 4-5 minutes.
  3. Add a jar of passata sauce, a tin of crushed tomatoes, salt, pepper and Italian seasoning. Bring to the boil and then simmer for 30 minutes on low-medium heat until the sauce has thickened up.
  4. Set up three stations for crumbing the eggplant. Station 1: flour, salt and pepper. Station 2: 2x whisked eggs and a tablespoon of milk. Station 3: breadcrumbs, oregano and parmesan cheese. One by one coat the eggplant in flour, dip in the eggs and coat with the breadcrumbs.
  5. Heat olive oil in a fry pan on medium-high heat and fry each slice of eggplant for a few minutes on each side until golden brown.
  6. In a baking dish layer the eggplant and sauce, adding extra parmesan in between each layer. Finish with a layer of sauce.
  7. Put the dish in the oven on 180 degrees until the cheese has melted (20-30 minutes).
