Encanta Echo                    December 2020
Only a couple of weeks left until the end of 2020, and like many in the business events sector I am looking to saying goodbye to a year that has brought many downs and only a few ups. The last couple of months, the Encanta team has been delivering some short lead time events supporting some of our past clients as well as delivering virtual events and our first hybrid event connecting delegates and speakers both in person here in Western Australia and virtually to other attendees across the globe.
Faith Gasparini in our team has been working tirelessly each month to put our Encanta Echo together, although not released due to a certain Managing Director missing her deadline to write the welcome! So, this welcome may be a longer than usual to make up for the past couple of months.
October saw us welcome our latest Encanta Enchantress Simone Watt to our east coast team. Simone is settling in well into the Encanta way and will be delivering some of our east coast events in 2021 and beyond. Priscilla welcomed her beautiful twin girls Ella and Evie into the world, earlier than anticipated – but already have they been ear marked as some of our first customers of creche facilities at our face to face events being delivered in 2021!  Sadly, though we also have seen the departure of one of our valued team members Nakita, as she takes her career in a different direction into the mining sector.
Like many in our sector, 2020 has been a challenging year, with a number of tears, and change has needed to occur in order to ensure our survival for the future. However, the future is looking bright as borders are brought down and clients regain confidence to deliver face to face events in a new world COVID-safe manner. The down time allowed us to develop our COVID safe strategies and risk management plans, led by Jade Riolo. We know and our clients know too that when they choose to meet again, that Encanta has the right policies and procedures in place to deliver a safe event for all participants.
We head into 2021 with a new invigorated outlook on the future, including relocating the Encanta Perth office to the up and coming Beaufort St, Inglewood precinct. It will be a new way for all of us (especially me as we create an open office plan and need to keep our voices down!), but excited by the space and all of the social options around us. Most importantly for me personally it allows me to stay close to my children and their school, so no more stress about being late to pick them up in the afternoon as now they can walk to the office.
The last quarter of 2020 has been busy for us, with us bringing events out of hibernation, managing the office move and recruiting new team members. It is a positive sentiment which we look forward to carrying into 2021, as I hope you and your business can do also. The festive season break cannot come soon enough and we hope that you have some time to reflect, share, and be around loved ones at this important time of the year.
In closing from all of us at Encanta – have a wonderful Christmas and here is to an amazing 2021 and the many goals we will be kicking!

PCOA20 gave the Encanta team, in both Perth and Melbourne, the opportunity to attend a conference in person. Not only did we gain knowledge and insight from industry stalwarts and experts, we made valuable new connections online and in person. 
Hello to our Clients
The Encanta team is very fortunate to work alongside so many wonderful clients. This month, we would like to feature a long term client, Amanda Bagnall, from Suicide Prevention Australia. Lexie Duncan, our Director of Events, East Coast started working with Suicide Prevention Australia in 2014 and with Amanda in 2018 on the National Suicide Prevention Conference. There is so much more to just running a conference, the reward not only sits in the finished product, but the people you meet and friendships you make along the way.

Faith Gasparini 
Faith’s career in events commenced 5 years ago whilst undertaking a Bachelor of Business in Event Management and Marketing. Since then she has worked across a varied calibre of events from small events to exhibitions hosting more than 40,000 visitors. This year she joined the Encanta team to grow and immerse herself in the world of conferencing. 
Warm Fuzzy 
Priscilla and her family are excited to announce the delivery of identical twin girls, Ella and Evie catching them off guard, arriving six weeks early on 23 November at 3.24am. Priscilla relocated to Queensland earlier in the year to be with family and big sisters Ashley (14) and Jayde (10). We wish Priscilla all the best whilst she is on maternity leave and will keep her girls in our thoughts as they prepare to come home over Christmas. 
Recipe of the month
If you love Sri Lankan cuisine, this month's recipe is for you! One of Nicolle's favourites to feed the family and when entertaining is the Kukal Mas Chicken Curry. 
Kukul Mas Chicken Curry

1.5 kg chicken or chicken pieces (I skin the chicken pieces)
3 tablespoons of oil (ghee is best for flavour but use oil for better health 😊)
¼ teaspoon fenugreek seeds
10 curry leaves
2 large onions, finely chopped
4 – 5 cloves of garlic, finely chopped
2 teaspoons finely grated fresh ginger (can use from a jar but not the same flavour)
1 teaspoon ground turmeric
1 teaspoon chilli powder
1 teaspoon ground cumin
½ teaspoon ground fennel
2 teaspoons paprika
2 teaspoons salt
1 tablespoon ground coriander
2 tablespoons white vinegar
2 tomatoes, peeled and chopped (can use a tin of chopped tomatoes)
6 cardamom pods, bruised in mortar and pestle
1 stick cinnamon
1 stalk lemongrass or 2 strips of lemon rind
1 cup thick coconut milk
Joint chicken or have your butcher do this for you. Cut the breast and thighs in halves, leave wings and drumsticks whole. Heat ghee or oil and fry fenugreek and curry leaves until they start to brown. Add onions, garlic and ginger and fry gently until soft and golden. Add turmeric, chilli, coriander, cumin, fennel, paprika, salt and vinegar and stir really well. Add the chicken and stir over medium heat until chicken is thoroughly coated with the spices. Add tomatoes, the whole spices and the lemongrass or lemon strips and cook covered over a low heat for 40-50 minutes. Add the coconut milk and taste to see if it needs more salt. I add a squeeze of lemon at this stage. Note: don’t cover after adding the coconut milk and don’t allow to boil. Serve with rice and various accompaniments.

Fun fact: this recipe uses paprika to add colour, in Sri Lanka they use about 30 red chillies to achieve this colour, along with some heat!

In a year full of change, the Perth Team have one more to go this week. After 14 years in Nedlands, the Perth office has moved to Beaufort Street, Inglewood. Their had work has not gone unnoticed as they have packed up the old and set up the new all throughout the busiest month of year. We look forward to welcoming our clients to new open plan office in the new year.
