Encanta Echo                        August 2020
Welcome to our August edition of the Encanta Echo. To say that the year is flying by is an understatement, but like many I will be happy to say goodbye to 2020 and hope that 2021 brings success to all those who have suffered under the current restrictions.

This time last year, I felt that I was on a plane and staying in a hotel every second week and to be honest do not miss that part of the job. What I do miss though is the human connection, the butterflies you get at the start of the opening session, the ability to finally meet people you had been communicating with for so long; and the sense of fulfilment at the end of an event on a job well done. However we know that it is going to take some time to get back to that euphoria we once felt, hybrid events (a combination of physical and virtual) will be the way forward for the next couple of years and our team has been working hard behind the scenes to test the various platforms, run the budgets and recommend the best solutions for our clients.

Personally, the past month has been one of the most difficult to date as the reality starts to kick in that changes need to be made to the structure of the business and how we survive the next 12 months. We have needed to say goodbye to some of our Perth team members through this restructure but excited by the possibilities as we search for a new team member for our east coast office. Like many of our industry colleagues it is a long road to recovery and ensuring consumer confidence to meet again. That being said, leads for 2022 and 2023 remain extremely positive and having recently been appointed for an event for September 2022, excited by the start up phase that this conference planning brings and looking forward to more opportunities like this in the future!

Team Tips with Jade
Like many offices Encanta has been embracing lots of new ways of working as a team both in the office in Perth and remotely with the team in Melbourne. Microsoft Teams has been a huge help and our favourite feature at the moment is the Planner app.
The Planner app helps us map out the key milestones for each event week by week, so we can see where each team member's key focuses sit. It’s especially helpful when event dates and deadlines are continually changing that we can see upfront the impact of those changes to make sure each team member is fully supported. For those who want to give it a go themselves here are some key tips for how we use Planner:
  1. Create a new bucket for each event or project. Tip: we also have a bucket for annual leave so we can see what due dates fall during a team member's annual leave.
  2. Each task within that bucket is labelled as “Event Name > Milestone/Task > Team Member”. All of these title details mean they are easily viewable in Schedule mode without having to apply filters.
  3. Each task is allocated a start and due date. Tip: Keep in mind time required to action the item and include this in the due date. E.g., when closing early bird registrations we allocate the full week to this task rather than just the closing date as we know the whole week would be busy with enquiries and checking registrations.

Pan Pacific Perth - Bobby's BBQ Truck
Jumping on board the pay it forward initiative, Pan Pacific Perth's food truck - Bobby's BBQ Truck is helping house the homeless one Bacon and Egg Roll at a time.  With the sale of every roll, all profits go to Ruah Community Services to secure a permanent home for someone sleeping rough on the streets of Perth. Customers can also pay it forward by buying a meal for someone who can’t afford it themselves. Encanta Netball Team
We are so pleased to see our Encanta sponsored Netball team now back on the courts again! Of course practicing COVID-19 safe games, we can't wait to see how they play this season.  
Destination York 
In Perth we are treated to glorious winter days, where the sun shines bright without a cloud in the sky and temperatures average between 15 – 22 degrees Celsius. Mother nature blessed us with one of these gorgeous days recently, so Event Coordinator Nakita Rogers took the opportunity to venture east to York, the oldest inland town in Western Australia and of course the adventure featured company mascots Simba and Nala.
York is located 97 kilometers east of Perth and is situated in the valley between Mt Bakewell (Walwalling) and Mt Brown (Wongboral) along the Avon River. The area was first home to the Ballardong Noongar people, with Europeans settling there in 1831 and the township being established in 1835.
The heritage town features a variety of attractions with lots to see and do, whether you enjoy getting amongst nature or immersing yourself in the history of the town.

Warm Fuzzy
A very big congratulations to Nakita who was awarded her Australian Citizenship on Thursday 22 July, 2020! 

Here is a recap on how Nakita has worked towards earning her Citizenship
2018: Applied for a resident return visa (which provides permanent residency status) and was required to hold this status for 12 months.
2019: Applied for Australian Citizenship and completed an interview and test.  
January 2020: Received confirmation of Citizenship acceptance pending ceremony (4 – 6 month wait).
July 2020: Received registration details for the ceremony to be held at the local council (City of Stirling).
22 July 2020: Attended the ceremony pledging herself to Australia and received a certificate, gold coin from the Perth Mint and electoral enrolment forms.
The City of Stirling hosted the first two face to face Citizenship Ceremonies since before COVID-19 banned events and gatherings in March in Perth.

To comply with COVID-19 protocol, sanitizing stations were situated upon entry, those who were receiving their citizenship registered and received a name badge and were only permitted one guest.

An acoustic guitarist was organised to entertain prior to the formalities starting, which was followed by the national anthem sung by everyone and formalities commenced.

Five groups were invited on stage (3 groups pledged to god and country, 2 groups pledged to country), the pledge was said out loud as a group and each received their citizenship pack which included a certificate and electoral enrolment form. Following the completion participants were able to take photos with the Deputy Mayor.  
Recipe of the month
With our Melbourne Team still in lock down, the creative ways of spicing up their home-life is still top of mind. Recently Priscilla hosted a French-inspired evening in her household including French attire and most importantly French cuisine. Take a look at her chocolate mousse recipe featured below.  
  • 300g good-quality dark chocolate, roughly chopped
  • 3 eggs, at room temperature 
  • 1/4 cup (55g) caster sugar
  • 1 tablespoon good-quality cocoa powder, sifted
  • 300ml thickened cream, plus extra whipped cream to serve
  • Grated chocolate, to serve
Step 1

Place the chocolate in a heatproof bowl over a pan of gently simmering water (don't let the bowl touch the water). Stir until melted. Remove bowl from heat and set aside to cool slightly.
Step 2
Place eggs and sugar in a large bowl and beat with electric beaters for 5 minutes, or until mixture is pale, thick and doubled in volume. Fold in cocoa powder and cooled chocolate until combined.
Step 3
In a separate bowl, whip cream until thickened (be careful not to over-beat). Use a large metal spoon to carefully fold the cream into the chocolate mixture, trying to keep the mixture as light as possible. Spoon into 6 serving glasses and chill in fridge for at least 1 hour. Remove from fridge 15 minutes before serving, then top with extra whipped cream and grated chocolate to serve.
