Welcome to the latest edition of the Encanta Echo.
 
It is hard to imagine that almost three months ago when we returned from our Christmas break the team were all rested and raring for a fabulous year ahead. This included a farewell summer supplier thank you Encanta hosted at the end of January at the Mosman Park Bowling Club and possibly for many of us the last time we were able to connect with each other in person.
 
At the beginning of February, we packed our bags and boarded the Encanta mini bus for our team conference at the Aqua Resort in Busselton (yes even PCOs conference!). This was a great opportunity for our east and west coast teams to connect with us cooking, eating and laughing together for two days. It was not all about the food and wine and we had some great discussions and learnings, concluding with a facilitated session on creating a new vision and values for Encanta. The team are now working on putting that vision and ideas into practice.
 
When I asked the team to work on this edition of the Encanta Echo, I advised them that the only 'c' word they could use was the word conference. We wanted this edition to be positive and for us to share what is happening in our world. However it would be remiss if I did not take a moment to say thank you for the support, love and care from all of our suppliers, clients past and present and from the business events community as a whole who have reached out to check how our team are going. We have been touched and humbled by your messages and this has been a source of inspiration.
 
In closing I wanted to acknowledge the amazing team we have at Encanta. They are all who make Encanta the company we are and I thank them for their professionalism, understanding and support of the business in these unprecedented times.

Event Profile
TROG Live Virtual 2020 ASM
Our first conference for 2020 has set the pace for this year superbly led by our East Coast Director of Events, Lexie Duncan. With 5 days until the opening of the Trans Tasman Radiation Oncology Group Annual Scientific Meeting the decision was made to create Encanta's and TROG's first ever Virtual Conference. A learning curve like no other, Lexie took it in her stride working with the appointed virtual facilitator JPL Media to coordinate the TROG Organising Committee, over 95 speakers and 285 delegates from her Melbourne desk.

Supplier Shout-Out

Encanta hosted our first supplier shout-out on Friday 31st January at the Mosman Park Bowls Club and would like to take this opportunity to say a big thank you to all of our industry suppliers who attended. As the sun started to set, it was a beautiful evening to welcome our industry friends at a relaxed and fun evening of lawn bowls.
Team Update
Priscilla Matters
Priscilla has a Bachelor of Business with a Major in Hospitality and Event Management. She has over seven years’ experience in the industry, which includes working at the Royal Australasian College of Surgeons (RACS), managing medical conferences, dinners and welcome receptions. Priscilla has also worked for her local hospital, raising money for much needed medical equipment, capital works and research scholarships and grants. 
Jade Riolo
Jade is one of our Event Managers who started with Encanta at the end of 2019. Jade brings over 10 years of conference management experience to the team having worked both as an in-house conference manager and external professional conference organiser. She has worked extensively with associations organising large scale conferences in Australia and overseas.
Supplier of the Month
JPL Media
Our supplier of the month cannot go past JPL Media. Our team was so impressed with the level of professionalism and effort JPL Media upheld throughout the entire process of the Live Virtual TROG 2020 ASM and we look forward to working with them again this month on another Virtual Conference we are organising.
Community Highlight
Pan Pacific Perth
In case you haven't heard, we want to highlight some of the outstanding work our community is doing throughout these times. Pan Pacific Perth along with Ruah Community Services, Anglicare WA and Uniting Care West have relocated over 30 homeless people at risk, from off the streets and into their hotel. It is the actions of today that we will remember when this is all over.
Melbourne Convention & Exhibition Centre
The support we have personally received from the MCEC throughout the past few weeks has been second to none. From teams and events across the board, this is a venue that strives to work with you in difficult times, not against you. Our conferences will be up and running as soon as possible but not without the continued support of the MCEC teams.
Wellbeing
Team Member, Michelle Bye has been busy cooking up a storm during her time in self-isolation and would like to share with you one of her favourite recipes to date. It is important to look after your mind, body and soul during these times and what better way than some yummy homemade pasta! Why not give it a try? 
Homemade Fresh Tomato Sauce
Serves 4
5 very ripe large tomatoes
Bulb of garlic
2-3 brown onions
Lots of fresh basil
1T olive oil
Chilli to taste
 
Cut crosses in the tomatoes (top and bottom) and place in large pot of boiling water for 5 minutes
Place tomatoes in ice water and place in fridge for 10 minutes
Dice onions, slice chilli, crush garlic and wash basil leaves
Peel skin from tomatoes and crush by hand
Fry up onions in the olive oil on low heat for 5-10 minutes
Add chilli and garlic and fry for another 3-5 minutes
Add crushed tomatoes and simmer with lid on for 30 minutes
Take sauce off the heat and wait for the sauce to cool
Add basil, salt and pepper and then blend into a smooth sauce
Lasts in fridge for up to 5 days

Fresh tagliatelle
Serves 4
2 1/2 cups tipo 00 flour
1/2 teaspoon salt
4 eggs, at room temperature
Extra flour, to dust
Sift the flour and salt together onto a clean work surface. Use your hands to shape the flour into a circular mound. Make a well in the centre. Place the eggs in the well and use a fork to lightly whisk. Use your fingertips to gradually blend a little flour into the egg mixture. Working with your fingertips, continue to gradually draw the flour into the centre until the mixture forms a dough.
 
Lightly flour the surface. Firmly knead the dough by using the heel of your hand to firmly push down into it and then away from you. Lift the dough with your fingertips and fold it back on itself towards you. Turn the dough a half turn and repeat. Continue and repeat. Continue kneading the dough for 6-7 minutes or until smooth and elastic. Divide the dough into 4 equal portions and wrap each portion in plastic wrap. Set aside for 10 minutes to rest.

Attach a pasta machine to the side of a workbench and adjust the machine's rollers to the widest setting. Spread 4 clean, dry tea towels over the work surface close to the pasta machine. Unwrap a portion of dough and use the palm of your hands to flatten it into a rectangle. Dust the rollers with flour and roll the dough portion through. Dust again with flour and repeat on the same setting. Fold in the shorter sides of the dough to meet in the centre to form a smaller rectangle and feed through the machine again. Repeat this process 3-4 times or until smooth.
 
Reduce the width between the rollers by 1 and roll the dough through as before. Repeat the process, reducing the setting each time until the dough is 1-1.5mm thick. The settings on all pasta machines vary. The last setting on some machines may roll the dough too thin, resulting in it sticking to the rollers and tearing. So be careful to only reduce the setting and roll the dough until it reaches the desired thickness.
 
To cut pasta into tagliatelle using the pasta machine, you will need a tagliatelle cutting attachment. Fit the machine with the attachment and feed the pasta sheets, one at a time, through the fettuccine attachment. Cook immediately or store individual portions as loose nests.
 
Spread the pasta sheet over the clean tea towels to dry, making sure they don’t touch each other.

Warm Fuzzy
Encanta Team Member, Charlotte and her partner Liam got engaged in Amsterdam on January 1st, 2019. Charlotte and Liam have been busy planning their dream garden wedding set for March 2021 at Brookleigh Estate. They recently received their engagement photos from their fabulous photographer Anthea Auld which were taken in Guildford, one of their favourite spots!
